  1. Not necessarily my fave way to cook a chicken per se, but definitely a favorite way to use cooked chicken (if that makes sense)! This is a year-round favorite recipe at our house, even though soup traditionally tastes better in the fall and winter. Enjoy, it's awesome!!

    MEXICAN CHILI
1 lb. ground beef, ground venison/pork mixture, or shredded chicken
    1 medium onion~chopped
Brown burger/venison a bit (for chicken, crock-pot cook with onion, below spices, rotel and chiles, then add the rest of the ingredients after shredding and heat through)

    In your crock pot, combine:
    Slightly browned burger
1 pkg Hidden Valley Ranch seasoning
    1 pkg Taco seasoning
    1/2 tsp. chili powder
1 sm. can chopped green chili's
3 cans of beans (pinto, kidney, black, great northern, any combo is good)
corn from 2 cobs (or you can use frozen)
    1 can diced tomatoes
    1 can rotel
    Juice of 1/2 lime
    Some chopped cilantro

Stir everything together and cook in crock-pot 4-6 hours on low (I started it on high, then turned it down after it was simmering). Serve over Fritos, shredded cheese and sour cream (and any other toppings of your choice).

  2. does it have to be a whole chicken or could it use parts of a chicken?

  3. it could be either. my thought was to give ideas on how to use a whole chicken so people could get ideas.

  4. Because my life is nuts, I usually do the chicken stock method you previously posted with a whole frozen chicken. Then i have stock & meat to make several meals or to freeze & use when in a pinch. The Arnold Acres chicken smells so much better than store chicken when it is cooking. I often smell a chemical smell from those nasty store chickens!
